Apple Butter



The aroma of the apple butter cooking is almost as delicious as the spread itself!

12 - 14 apples (Jonathan or Winesap is best -- but any kind will work)

2 c. apple juice

sugar (see recipe for amount for sugar and next three ingredients)

cinnamon

ground allspice

ground cloves

1/2 c. Sauterne (optional)

Wash, core, quarter apples (do not peel) Combine apples & juice in lightly oiled slow cooker. Cover and cook on low 10-18 hours or high 2-4 hours

When tender, put through food mill to remove peel. Measure cooked fruit. For each pint, add 1 c. sugar, 1/2 teaspoon cinnamon, 1/2 tsp ground allspice, 1/2 tsp ground cloves. Stir and cook another 6-8 hrs on low, stir every 2 hours, Remove cloves after 3 hrs and allow to cook down. Add Sauterne and spoon into jars.
