Coffee Eggnog



For a coffee variation on the more familiar eggnog recipes, try this delicious treat! It will definitely be a hit at any party.

Ingredients:

2 cups milk
3/4 cup water
2 eggs, separated
1/2 cup sugar
3 tablespoons instant coffee granules
Dash of salt
1 tablespoon vanilla extract
2 tablespoons sugar
1 cup whipping cream, whipped
Grated unsweetened chocolate

Place milk and water in top of a double boiler; bring water to a boil. Cook until milk is thoroughly heated.

Beat egg yolks at medium speed of an electric mixer until frothy. Add 1/2 cup sugar, coffee granules, and salt, beating until thick. Gradually stir about one-fourth of hot mixture into yolk mixture; add to remaining hot mixture, stirring constantly. Cook in double boiler over low heat 30 minutes, stirring occasionally. Stir in vanilla; cover and chill.

Beat egg whites (at room temperature) until soft peaks form; gradually add 2 tablespoons sugar, beating until stiff peaks form. Fold egg whites and whipped cream into chilled mixture. Sprinkle each serving with grated chocolate.

Yield: 5½ cups.
