Easy Apple Cheesecake

Easy Apple Cheesecake solves the problem of trying to find a recipe to use for company coming for dinner. Try this. Prepare in advance and save in the fridge. 6 3.5-ounce refrigerated cheesecakes without crust
1 teaspoon grated orange peel
1 9-inch graham cracker crust, homemade or store bought
2 cups water
1/3 cup granulated sugar
2 medium-size apples, 1 each red and yellow delicious, cored, halved length-wise and cut into thin crosswise slices 2 tablespoons apple jelly
warmed Fresh mint sprigs, optional
1. In medium-size bowl using back of fork, mash cheesecakes to coarse crumbs. Add orange peel; toss well to mix. Place cheesecake mixture in prepared crust; press in firmly and evenly. Refrigerate at least one hour and up to three days. 2. Meanwhile, in 10-inch skillet over medium-high heat, stir water and sugar until sugar dissolves and mixture boils. Add Golden Delicious slices; reduce heat to low. Simmer, uncovered, 3 to 5 minutes until tender. Using slotted spoon, remove apples to paper towels to drain. Repeat procedure with Red Delicious slices, adding more water if necessary. 3. Arrange apple slices over cheesecake as pictured; brush lightly with apple jelly. Decorate with mint sprigs, if desired, to serve. Makes 8 servings.
