Eggs with Bacon and Pineapple
At first, eggs with bacon and pineapple may sound a little strange to you, but try it and I think you will agree that it is a very tasty change from the usual fried eggs. Ingredients: 1/4 cup butter 1 15-oz can pineapple slices 1/2 pound bacon, chopped 1 onion, chopped 6 eggs
Melt butter in frying pan. Drain pineapple and fry in melted butter until lightly browned. Remove from pan and keep warm. Fry chopped bacon and onion until tender. Drain and spoon over the warm pineapple. Keep warm. Fry eggs, one for each pineapple ring. Remove from pan, drain and arrange on top of pineapple rings. Serve immediately. Makes 6 servings
