Evelyns Ring Mold Salad
Evelyns Ring Mold Salad recipe was given to me in the early 1960's by a friend of the family who had already been making it for family get-togethers for over 30 years! It is still great. 1 large pkg lime Jello 3-4 ounces of cream cheese 4 or 5 pineapple slices, reserve the juice 1 cup whipping cream 1 cup pecans or walnuts
Add enough water to pineapple juice to make 1 cup. Bring to boil in sauce pan and add Jello. Chill until slightly set. Then beat cream cheese and whipping cream into mixture. Blend in pineapple and nuts. Pour into ring mold (or whatever shape you prefer) and chill until set. Serve on bed of lettuce leaves. This is a pretty green salad to serve for the Christmas holidays.
