Hush Puppies





I remember my first visit to the Hush Puppies Catfish Shack in Mississippi. I got there a little early and there was not a single car in the lot. I thought that this might be a major mistake, eating at a restaurant where no one ate. About 15 minutes later the lot was full and there was a line to the door. I was first in line and realized that this would be the best meal yet...I was right!

1 1/2 cups yellow cornmeal
1/2 cup flour
2 tablespoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 egg, slightly beaten
1 cup buttermilk
4 tablespoons bacon drippings, melted
2 green onions, minced
2 cups peanut oil

Combine all ingredients except oil in a deep mixing bowl. let batter stand for about 10 minutes at room temperature and stir. Heat oil to 375 degrees in heavy skillet. Gently slide batter a teaspoonful at a time, into hot oil. Cook about 6 at a time. Fry until hush puppies are golden brown on all sides. Drain on paper toweling. Serve hot.

Hush puppies are great with catfish, but in the South, you can combine them with just about anything!

Makes about 4 servings.
