Pasta with Shrimp and Asparagus
A quick yet elegant dish--for everyday or a special occasion. Ingredients: Cooked and Drained Pasta of your choice 8 oz asparagus spears, trimmed 1 clove of garlic 4 Tbsp olive oil 10 oz large shrimp pepper to taste
Directions: Steam trimmed asparagus for about 2 minutes over pan of boiling salted water. Drain and set aside. Fry garlic in olive oil over low to medium heat until softened. Add steamed asparagus and cook until tender, stirring gently to avoid burning. Add shrimp to the pan, season with pepper and cook until shrimp turn pink. Add pasta to the shrimp and asparagus and drizzle the remaining olive oil over the top. Toss thoroughly and serve at once.
